1 large red grapefruit, peeled and seeded
2 Tbsp (30 mL) lime juice
8 canned lychees, drained
In blender, combine together grapefruit, lime juice, and lychees until smooth. Strain, discarding solids; pour juice equally into 4 champagne glasses and top with sparkling water. Garnish with a grapefruit twist, lychee, and some mint, if desired. To make this a cocktail, add a shot of vodka or gin.
